Salmon Steaks with Cream Cheese

Ingredients

  • 6 salmon steaks, 1” thick          
  • 1 T. chopped parsley
  • 1 t. dried basil              
  • 3 T. melted butter
  • 1/4 t. salt                   
  • 4 oz. low-fat cream cheese
  • 2 T. grated parmesan cheese           
  • 1 T. chopped green onion
  • 2 T. lemon juice               
  • 1/4 t. pepper
  • 6 toothpicks

Directions
Rinse steaks with cold water, pat dry. Through the round part of the steaks make a cut to the center, creating a pocket. Combine cheese, parsley, basil, and green onions. Divide mixture evenly into 6 parts, form flat ovals, place one in each steak pocket, securing with a toothpick. Place steaks on well-greased broiler pan. Combine butter, lemon juice, salt and pepper. Baste steaks with butter mixture. Broil 4-5 inches from heat for 4-5 minutes on each side or until flaky.
